Cats have scent glands on their paws, so once they begin to scratch in certain places it leaves a scent marker they need to keep topped up every time it begins to fade. As your cats have been using your couch as a scratch post it has become impregnated with their claw scent. Before you get rid of the old couches, remove a section of fabric from the areas where the cats have been scratching and wrap this around a scratch post, or use it to cover a plank of wood. The scent will attract your cats to scratch these items instead of your new furniture.
